Like many players, I tend to rest the palm of my hand near the rear on the bridge saddles. I have a 1979 Strat that has really rough allen bolts in the
bridge saddles. I've tried a light sanding with metal sandpaper, but no improvement. Has anyone else run into rough edged saddle bolts? Any solutions
other than replacing them?

You would need to use a small file and remove each screw one by one, take one screw out and file the top edges with slight bevel, smoothing out the sharp edge,
replace the screw and repeat for the rest of them. Works good but takes some time.
